I so appreciate this recipe. I made it frequently 40 years ago or so but I don't think it was then NYT, I could be wrong. Last night I made it with some leaf lettuce as well as Napa. The trouble with using Napa is that it has less water in it, hence more substantial, but thus adds less liquid to the pot. I feel I prefer it with Romaine (if my food memory stands 40 years later). I will try Romaine next time and there will be a next time. Thank you for posting.
